My dear friend, Judi, is renowned for her one of a kind pies. She is the Queen of Pies and rightly so. I have to say I have never met a pie of hers that I haven't enjoyed immensely. My mom and I often head over to her house to enjoy her company, flowers, conversations and, of course, her fine cuisine, including those lip smacking pies. She spends days creating her masterpieces with a variety of fillings that would put a bakery to shame. What is even better is the fact that she willingly shares her scrumptious creations with everyone.
On one of our visits, we noticed a new sign hanging in her cozy kitchen proclaiming that pie solves everything. I chuckled when I read this, but when I took my first bite of pie, I would have to agree. Just for that second when the flakey pie crust and the sweet tasting fruit filling hits your tongue and lingers for that initial second- you have that awe moment- that yes there is nothing finer than that. For that instant, all is well. Yes, pies solve everything!!
Can I have another slice? Oops, I gotta go, I hear a pie calling my name-strawberry, rubarb......yum.....
